Mentioning his mom's apple pie was such a humanizing detail. It grounds the story in something real amidst all the spy thriller nonsense. Dimitri holding him to that promise shows he actually cares about a future. It makes the sudden termination order even more tragic. Between Us & Our Enemies balances sweetness and danger perfectly.
